Year of the habanero?

habaneroHave you tried our El Toro?

We truly believe this year is the “Year of the habanero!” With all the searches that are being done on the web for habanero (s), how could it not be? Right before the holidays, Above the Coals started to produce a very tasty seasoning called El Toro. This is our version of the habanero based seasoning that we are starting with. This seasoning has a full amount of flavor with hints of sweetness and a touch of salt without sacrificing the flavor of your food.

A small percentage of tasters were asking for “more heat” and Above the Coals decided to ramp up the amount that we use in each handcrafted batch. We decided this brand would be called “Lavanero.” This seasoning has 50% more habanero used in it.

Both are available on our Square Marketplace site and here on www.abovethecoals.com with a 20% discount by using “love20” at checkout.

Warm up with some seasoning that packs either a little heat, or a lot! Get some today!

BBQ delight – the perfect gift!

Thinking back…

When a great sale comes up we tend to talk a lot about the past and where we were, and where we are now. In April of this year, we launched this delicious product which has transformed how many grill/smoke/BBQ. With Black Friday and the holiday’s fast approaching, we wanted to have some aggressive pricing for this sale as it we did in April when we launched ATC.

Some of the things that you have to look at when we were developing this product were the following:

(Remember these when you are shopping in the spice aisle…)

  • Do they use fresh ingredients? I doubted that….so we decided there was no other way. All fresh!
  • Do you know what those chunky things are in those mixes on the shelf that you are getting for short money? I had no clue…so I developed ATC!
  • Do you know when the bottle on the shelf was made? It is fresh? We didn’t think so….so we make your seasoning FRESH when you order it and get it out the very next day!
  • Do you enjoy your food KNOWING what you put on it/in it/around it is 100% fresh, when it was made and that it’s made with the passion of doing it all by hand.

ATC is 100% handcrafted and we would have it no other way. Our process is what gives you a seasoning that you can look at and enjoy the taste either from the jar or on your fare!

Get this deal this week and pick up one for the person that is tough to buy for this Holiday Season! Pick up $45 worth and receive free shipping!!

Some Soup for you!

Seasonings not just for the Grill/BBQ…

IMG_3881With Winter fast approaching and the crock pot dusted off, it’s time for soups and chili! We have been making chili here, but wanted to show you our Beef Barley/Lentil Soup. This is one that will warm your heart and your stomach!

We get a lot of friends/customers who ask if they should use the Above the Coals Seasonings on other foods?

The answer is…YES.

We love our seasoning on everything from popcorn (this has been tried) to mixed into handmade burgers (Video located in the Video Tab here on the website), to an added “extra” in soups and chili’s.

What seasoning goes with what soup/chili?

We all have preferences, and mine are wide. I love a bit of the 2 Alarm in my chili because of the array of flavors and the fact that I get some of the green pepper taste on my pallet. Pictured here is our Carolina Heat Wave added to the Beef Barly/Lentil Soup, which kicked up the flavor and added some heat to this dish. The table grind black pepper used in the Carolina really gave this soup a nice peppery bite, but was also complimented by the other ingredients in the seasoning.

It was a great taste to start with, and with the added seasoning it really made it tasty.

I have tried the Signature Classic in this soup (in the last batch) and the flavors were different, but added that BBQ taste to the meat and potatoes that I wanted without the heat. It’s all personal preference and that is the nice part of having a little bit of Above the Coals Seasonings handy.

Here’s the recipe:

Ingredients:

1 lb. lean ground beef

1 Med. onion chopped

2 Cups cubed red potatoes

1 Cup dry lentils (rinsed)

1/2 Cup medium pearl barley

8 Cups water

2 Tsp. Beef Bouillon Granules

1 Tsp Salt

1/2 Tsp. Lemon Pepper Seasoning

1 28 oz. can/crushed tomato

Cook beef and onion over medium heat until meat is no longer pink, then drain. Transfer to slow cooker then layer with potatoes, lentils and barley. Combine water, bouillon, salt, and lemon pepper and pour over vegetables. Cover and cook on low for 6 hours and then add tomatoes at the 6 hour mark and stir. Cook 2 additional hours and ENJOY!! Add some Above the Coals seasoning to taste and let us know what you think!

As an added note:

The habanero seasoning that has been talked about a lot lately will be available VERY soon. Please check our Facebook Page for release dates and how you can get your hands on some!

Comfort Food – Chili

Chili
Winter’s coming…

With the Winter on the horizon here in the Tri-State (New England) area and temperatures dropping, some comfort food is just what the Dr. ordered.  This past weekend we took the liberty as we always do when making chili to “eye” the seasonings that go into the pot and after getting the taste just right some flare was added to the final product.

Above the Coals BBQ Seasonings has spread the word and some samples of our new habanero based seasoning to select customers for review, and I have to concur that it really does liven up the flavor of many foods. As you can see in the picture to the left, some of the habanero seasoning (name TBD) was sprinkled on top (for the picture) and then mixed in.

It was……..stunning. Delicious. Like placing a few (…….) it was the delay in heat that got me. I could taste the flavors of a seasoned pot of chili, but received the delayed response from the heat that allowed me to enjoy the chili without overpowering it. Just delicious (But we are biased I suppose)

The second day is always better

I have heard for the longest time that many comfort foods are better the day after being made. I can only think of one that is better the day after. It’s chili. Don’t get me wrong, I love pizza and cold chicken wings the day after and even some chicken breast, but the flavor in those foods are the same.

When it comes to chili, the flavors have some time to marry and make the mixture much more robust. Today’s helping of yesterdays bounty was just that. Robust! Also, knowing that the flavors were going to be popping much more than yesterday, I went with the Above the Coals Signature Classic Seasoning for this helping. The pictures below do it no justice as to how great it really was.

Here are some helpful hints for reheating chili in the microwave:

  • Start with .45 seconds to a minute on the timer and remember to cover what you are heating!
  • Take out and stir well
  • Add an additional 1 minute in the microwave
  • Stir again
  • If you like cheese on your chili, add a layer and heat for 20-25 seconds and let it rest a few minutes before you burn your tongue.
  • Add Above the Coals BBQ Seasonings (Classic, 2 Alarm, Carolina, or the new habanero coming out soon) and ENJOY!

I also enjoy some sour cream with my chili, and who could forget some corn bread. (Make sure to add sour cream AFTER you heat it up, or you’ll be left with a liquid mess of sour cream on top your chili.

Below you can see today’s take, because the 2nd day is always better (for chili anyways!) Just awesome!

I’ll be getting my personal chili recipe together and producing a video for you in the coming months. It’s to die for…trust me!
