Year of the habanero?

We truly believe this year is the “Year of the habanero!” With all the searches that are being done on the web for habanero (s), how could it not be? Right before the holidays, Above the Coals started to produce a very tasty seasoning called El Toro. This is our version of the habanero based seasoning that we are starting with. This seasoning has a full amount of flavor with hints of sweetness and a touch of salt without sacrificing the flavor of your food.

A small percentage of tasters were asking for “more heat” and Above the Coals decided to ramp up the amount that we use in each handcrafted batch. We decided this brand would be called “Lavanero.” This seasoning has 50% more habanero used in it.

Some Soup for you!

Seasonings not just for the Grill/BBQ…

IMG_3881With Winter fast approaching and the crock pot dusted off, it’s time for soups and chili! We have been making chili here, but wanted to show you our Beef Barley/Lentil Soup. This is one that will warm your heart and your stomach!

We get a lot of friends/customers who ask if they should use the Above the Coals Seasonings on other foods?

The answer is…YES.

We love our seasoning on everything from popcorn (this has been tried) to mixed into handmade burgers (Video located in the Video Tab here on the website), to an added “extra” in soups and chili’s.

What seasoning goes with what soup/chili?

We all have preferences, and mine are wide. I love a bit of the 2 Alarm in my chili because of the array of flavors and the fact that I get some of the green pepper taste on my pallet. Pictured here is our Carolina Heat Wave added to the Beef Barly/Lentil Soup, which kicked up the flavor and added some heat to this dish. The table grind black pepper used in the Carolina really gave this soup a nice peppery bite, but was also complimented by the other ingredients in the seasoning.

It was a great taste to start with, and with the added seasoning it really made it tasty.

I have tried the Signature Classic in this soup (in the last batch) and the flavors were different, but added that BBQ taste to the meat and potatoes that I wanted without the heat. It’s all personal preference and that is the nice part of having a little bit of Above the Coals Seasonings handy.

Here’s the recipe:

Ingredients:

1 lb. lean ground beef

1 Med. onion chopped

2 Cups cubed red potatoes

1 Cup dry lentils (rinsed)

1/2 Cup medium pearl barley

8 Cups water

2 Tsp. Beef Bouillon Granules

1 Tsp Salt

1/2 Tsp. Lemon Pepper Seasoning

1 28 oz. can/crushed tomato

Cook beef and onion over medium heat until meat is no longer pink, then drain. Transfer to slow cooker then layer with potatoes, lentils and barley. Combine water, bouillon, salt, and lemon pepper and pour over vegetables. Cover and cook on low for 6 hours and then add tomatoes at the 6 hour mark and stir. Cook 2 additional hours and ENJOY!! Add some Above the Coals seasoning to taste and let us know what you think!

Coming soon – Habanero based seasoning

As I mentioned just about a week ago, we had a lot of goals to achieve in the coming days/months, and even set some goals for over the Winter. When I started to think about this Summer’s bounty of freshly grown habanero peppers and how they would be used, I came up with “Seasoning Block”…similar to writers block…but trying to envision what it would look like, taste like and what would be going into it.

So, I grabbed a bowl and all my ingredients and started to work this week on something that some people have been asking for..”The hot stuff…” (as they coined it…)

I wanted to make sure that all the ingredients would do a few things (and mind you I haven’t cook with this yet), but I wanted to have the presentation of our Classic blend, but with the compliments of table ground black pepper and some other ingredients that would “lead you down the trail of flavor, then BAM….hit you with the “Here I am” sensation.

How hot is this?

Peppers are rated based on the Scoville ratings scale for heat. Here is where you can see what the ratings are for certain peppers. As described under the Habanero pepper page, you will read this:

The Habanero is one of the hottest and most famous chilis in the world. When eating and not thinking too much about the heat levels of the Habanero Orange, you will discover a plum-tomato apple-like taste. This extremely hot pepper is popular in Mexico, South America and the Caribbean. It’s 40 times hotter than a Jalapeno! The pods are about 5 cm long and 2.5 cm wide. The Habanero has a long growing season and loves heat. When you want to add some hotness to your dish, then the Habanero is one to put on your shopping list.

Watch out! The use of plastic gloves is recommended.

Name: Habanero Orange

This is the Big Leagues for the heat/pepper lover. The Scoville rating is 150,000-325,000 units. Straight up…It’s hot.

On a dry taste, I can tell you a few things about this. It’s sweet, super flavorful, then it evens out, then it introduces itself to your tongue. ‘Here I am!” An even heat spice, numbing, but still temporary without giving up the full flavors of the rest of the spice. I personally tried this and called and text everyone because IT IS what I was shooting for. At first I was thinking smokey salt with the ingredients that I used and it soured the salt after smoking it. That was out and I am glad I went with my instincts…

Where do we go from here?

As I always do, I will be testing this here on a variety of foods (in small portions) because the rest of the house doesn’t like it hot…just me. So, taste tests, some local taste testers will get samples and we’ll be sending out samples of the blend to selected customers to try. Samples will be sent out on a limited basis with an outline of the feedback that we are looking for.
