With the Winter on the horizon here in the Tri-State (New England) area and temperatures dropping, some comfort food is just what the Dr. ordered. This past weekend we took the liberty as we always do when making chili to “eye” the seasonings that go into the pot and after getting the taste just right some flare was added to the final product.
Above the Coals BBQ Seasonings has spread the word and some samples of our new habanero based seasoning to select customers for review, and I have to concur that it really does liven up the flavor of many foods. As you can see in the picture to the left, some of the habanero seasoning (name TBD) was sprinkled on top (for the picture) and then mixed in.
It was……..stunning. Delicious. Like placing a few (…….) it was the delay in heat that got me. I could taste the flavors of a seasoned pot of chili, but received the delayed response from the heat that allowed me to enjoy the chili without overpowering it. Just delicious (But we are biased I suppose)
The second day is always better
I have heard for the longest time that many comfort foods are better the day after being made. I can only think of one that is better the day after. It’s chili. Don’t get me wrong, I love pizza and cold chicken wings the day after and even some chicken breast, but the flavor in those foods are the same.
When it comes to chili, the flavors have some time to marry and make the mixture much more robust. Today’s helping of yesterdays bounty was just that. Robust! Also, knowing that the flavors were going to be popping much more than yesterday, I went with the Above the Coals Signature Classic Seasoning for this helping. The pictures below do it no justice as to how great it really was.
Here are some helpful hints for reheating chili in the microwave:
- Start with .45 seconds to a minute on the timer and remember to cover what you are heating!
- Take out and stir well
- Add an additional 1 minute in the microwave
- Stir again
- If you like cheese on your chili, add a layer and heat for 20-25 seconds and let it rest a few minutes before you burn your tongue.
- Add Above the Coals BBQ Seasonings (Classic, 2 Alarm, Carolina, or the new habanero coming out soon) and ENJOY!
I also enjoy some sour cream with my chili, and who could forget some corn bread. (Make sure to add sour cream AFTER you heat it up, or you’ll be left with a liquid mess of sour cream on top your chili.
